Much as I would like my kids to eat veggies, its so difficult. The mere sight of anything that resembles a veggie in their food gets them all “ewwwwwy”. My solution….hide the veggies. Instead of whole veggies, I make soup and blend in the veggies so they don’t see it. I also like mixing it in my ground meat for meatballs or burgers. I’m still thinking of creative ways to “hide” my veggies so if you have any suggestions…please please give them to me.

Being creative does help. I used to make cream of broccoli and cream of cauliflower soup which my three sons loved though they wouldn’t eat it, otherwise, until they reached high school. They also loved eggplant fries but not regular eggplant!

My kids loved gravy, I would make sure it was made with lots of veg’s. I hid them also, today they are 21 and 25 and eat lots of veg. Raw with dip is alright also, make a fondue night with chocolate and vegetables – just trying to help out.
