One of the first things I learned to cook were pancakes care of my trusty Nancy Drew cookbook. If I remember right, the title of the recipe was Alphabet Pancakes. You first had to carefully draw a letter on the griddle using pancake batter then once the bubble started appearing you needed to pour in more batter to complete the pancake.
Anyway, my Nancy Drew days have long been over but my pancake fever has not only intensified I have transferred it to my kids as well. They are dyed in the wool pancake lovers through and through. We have pancakes for breakfast twice or thrice a week but on weekends I try to spice things up a bit.
First things first….the pancakes came from a box but if you have your own recipe for pancakes, by all means use it.
Ingredients :
4 pancakes
4 lacatan bananas (sliced in rounds about 1/3 inch each)
6 tsps. brown sugar
2 Tbsps. butter
additional butter for spreading
syrup
whipped cream
In a heavy skillet, melt the sugar until caramelized. Add the 2 Tbsps. butter and cook until you form a caramel sauce. Add the bananas and cook for about a minute until all bananas are coated with the caramel. Set aside.
To prepare, take a pancake and spread with butter. Pour some syrup over and spread. Top with bananas and whipped cream.
